Besides being one of the most refined food, Truffle is also highly perishable and therefore it needs a lot of attention in handling it. Growing underground, truffles before being cleaned will be completly covered with soil, and this layer also protects the fungus from decay. So, it is good to leave it there if you are not going to consume it immediately. Instead, it will be cleaned from the ground if we are going to cook it.
Any tinge of dirt between the teeth will ruin the dinner.
Why should not truffle be cleaned immediately after its harvest?
Usually who sells truffles has already cleaned them before sales, even if only superficially. A freshly harvested truffle is quite dirty and full of excess ground. Although we bought it, it is likely to present even small dirty areas. Yet the first thing to do is not clean it: the fact that truffles for sale are not perfectly clean is not an error, but rather a technique to keep them as long as possible.
Both the peridium (the outside part) and a light layer of ground slow down the proliferation of microorganisms and the perishable nature, help to keep the truffle in perfect conditions and allow it to continue to mature, which is why the cleaning process will be done only at the moment of consumption.
The only exceptions for truffles that will be stored under vacuum or in the freezer.

Being particularly delicate truffles must be cleaned carefully to avoid damage and lose its unique aroma. To clean the truffle you need a brush with medium hard bristles (such as a toothbrush) and a smooth rounded knife.
Brush the truffle
Carefully we’ ll brush the truffle to remove any residue of ground, preferably without using water or dampening it using just a with a very thin stream.
If this action is not enough to take away all the dirt, you can use the tip of a knife to remove the residues that are embedded in the rind.
For the vast majority of truffles this process should be sufficient; only in cases of very dirty truffles, in which there is an higher risk of damaging the peridium removing it from the ground, we can help by immersing the fungus in cold water for a minute, dry it well and proceed with brushing.
At this point you can brush it doing everything with great delicacy.
In any case, if during cleaning of the skin of truffle you were to remove part of it, take note that the deterioration will be faster!
White and Black Truffle: cleaning tips
Some people say you should pay more attention when cleaning the white truffle and who believes that it is more difficult to clean the black truffle.
The white truffle is more delicate and there is the risk of ruining it with a too impetuous cleaning technique, so beware (also considering its price). However, it is also true that the black truffles are more difficult to clean because of their dark color camouflages the dirt of ground with the risk of leaving any residue that will ruin the flavor.
