HOW TO KEEP TRUFFLES FRESH
So You’ve Got a Truffle? Cool. Here’s How to Keep It Fresh
Truffle is one of the most prized and expensive foods that you find in the world. Unfortunately it is a product that falls apart easily, gradually losing its flavor. At the end of its life, it can also rot, thus becoming unusable.
For this reason, if you can not taste it immediately in excellent culinary receipts, it is essential to take some preservation techniques.
Here we will present four, with storage times more and more durable.
KEEP TRUFFLES IN THE FRIDGE
One of the most effective methods for preserving fresh truffles, is putting it in the refrigerator wrapped in absorbing paper, that has to be changed and cleaned at least once a day. In fact, it is very important to make sure that the paper will be always dry, since it is able to capture and absorb moisture from the truffle, avoiding mold or that the truffle rot. As an alternative to paper, a cotton cloth can be used.
The black truffle can stand in the refrigerator for more than ten days instead of white truffle, which recommended duration is maximum one week.
KEEP THE TRUFFLE WITH OIL
Truffle can be stored in a little glass vase, coated with olive oil and left in the fridge at a temperature between 2 and 4 degrees; in this way the fungus is maintained intact even for 7/10 days. Pay attention to the born of mold or the changin in its fragrance.
Through this method we also have the chance of using oil lightly flavored after consuming truffles.
KEEP THE TRUFFLE WITH RICE
Another common preservation technique but improper, is to deposit the truffle in a glass jar covered with rice and place it in the refrigerator; in this way truffles will keep for 3-4 days.
However, you should avoid this method because the rice dries the tartumetodi to preserve tuffle, making it dry. You might use it if you intend to make a present to a friend with a good fresh truffles, who promptly once received the gift, will store it in any other way.
The advantage of this method is that the rice will spice and can be used to prepare a delicious risotto.
KEEP TRUFFLE IN FREEZER
Keeping truffles in the freezer is indicated to preserve the product for a longer period (about one year). To prevent icing around the truffle, we suggest to dry the peridium ( i.e. the outside part) after washing it. You can freeze the entire truffle, inserting it in a cellophane bag for food, where possible by applying the closure with the special vacuum machine; or you can freeze the fungus already ground, washing and grinding it before storing in the freezer.
With this method, the aroma is preserved for up to 12 months.
Usually, Nero di Cognaro truffles are stored in the refrigerator wrapped in a paper until the day of their sale, when they are prepared inside of a very elegant branded glass jar with rice: in this way it will be possible to use both the truffle rice to prepare a tasty risotto, as specified a few lines above.
