Recipe Bundle of Pancakes with Uncinato truffle
YIELD: Makes 4 servings / 10 crepes
- Flour 180 gr.
- 2 eggs
- Milk 350 gr.
- Butter 30 gr.
- 5 slices of cooked ham
- 10 Edamer cheese slices
- 10 Truffle cheese slices
- Bechamel 50 gr.
- Grated Parmesan cheese 50 gr.
- Nero di Cognaro Uncinatum truffle 80 gr.
Put the flour in a bowl , 1 pinch of salt and milk. Work the mixture until it becomes smooth and without lumps.
In a separate bowl whisk the eggs with a fork and then add them to the batter, stirring constantly then add the melted butter. Cover the batter and let it rest for at least half an hour in the fridge.
Heat a flat pan, melt a small knob of butter and when it is hot, pour a ladle of batter in the center, then by tilting and turning, trying to distribute it across the surface. Cook for about 1 minute, shaking the pan occasionally to make remove the cracks from the bottom. When it will turn golden on the other side and wait in turn assume the same color. When ready, remove from padellala cracks, sliding it on a plate.

When you have finished preparing the crepes, stuff them with cooked ham, edam cheese and the pieces of truffle cheese.
